Lee's Waldorf Salad
This very easy, simple salad is full of flavour and has a long, rich
history. It was created in the 1890s at New York's Waldorf-Astoria
hotel by maître d' Oscar Tschirky. The original salad contained only
mayonnaise, apples and celery, but today is usually served with walnuts
and other ingredients.
SERVES 4
Ingredients
4 Coxs apples, peeled cut in to quarters and sliced (apple depending on season)
8 Celery sticks peeled, sliced on the angle thinly, centre leaves kept
Vinaigrette
Several slices of pickled walnuts
Seasoning (salt & pepper)

Method
- Place the apple and celery into a bowl and dress with the vinaigrette to taste, season
with salt and pepper. Place in to bowl add the walnuts and finish with
the celery leaves over the top.
